Lisa of Davidson North Carolina has asked the following question. Is the thin outer green watermelon skin edible? The answer is no, it is not edible and will cause indigestion or an upset stomach if consumed. There are obviously some vitamins and nutrients contained in the skin, however they are difficult for the digestive system to extract. The other major issue with the green watermelon skin, is that it has been in contact with soil and pesticides, and has more or less acted as the watermelon's sole line of defense. Even if you grew the watermelon yourself organically, the skin could still contain low levels of bacteria. So do avoid eating the thin green outer watermelon skin. Do not however confuse the skin with the rind, which are two totally separate parts of the fruit, the rind being completely editable. Simply trim the skin from the rind using a kitchen knife or potato peeler. Thanks again for submitting this question.
