We just received this amazing watermelon rind avocado salad recipe from Emma of Astoria Oregon. To begin first you will need to take out a sealable mixing bowl. Add into the bowl the cubed skinless watermelon rind, fresh chopped skinless avocado, finely chopped garden fresh dill, finely diced Vidalia onion, fresh minced garlic clove, superfine white sugar, Heinz gourmet red wine vinegar, extra virgin olive oil, freshly squeezed lime juice, and kosher salt. Tightly seal your bowl and then gently toss the salad so that you have an even distribution of ingredients. Next slide the bowl into the refrigerator to chill for at least half an hour. At the half hour marker, check the bowl for any excess liquid accumulation at the bottom, and drain most of it out if necessary. Your salad is now ready to serve.
