Watermelon Rind Chow Chow
To start this recipe you will first need to prepare your watermelon rind.
Take out a sharp kitchen knife and remove all of the thin green outer skin from the rind, then cut it into small cubes. Moving forward, next wash, rinse, and then chop up your Vidalia onions.
Next take out a boiling pot, add in the chopped onions and cubed watermelon rind, cover these ingredients with water, then place them on the stove over medium high heat.
Bring these contents to a boil, and let them cook for fifteen minutes, or until they're nice and tender. Next add in the sugar, pickling spice, vinegar, and let the ingredients cook for another five to ten minutes.
While these ingredients are cooking, take out sterilized canning jars and ready them for use. Right as you are about to remove your contents from the boiling pot, add in the ten ounces of yellow mustard, and stir the contents thoroughly for about a minute.
