Watermelon Rind Feta Salad

Ingredients

  • 4 Cups Of Cubed Watermelon Rind
  • 6 Ounces Of Fresh Cubed Feta Cheese
  • 12 Red Onion Strips
  • 5 Tablespoons Of Genco Extra Virgin Olive Oil
  • 2 Cups Of Fresh Spinach Leaves
  • 1 Teaspoon Of Colavita Italian Balsamic Vinegar
  • 1 Teaspoon Of Fresh Squeezed Lime Juice
  • 1 Pinch Of Ground Black Pepper
  • 1 Pinch Of Ground Kosher Salt

Preparation instruction

To begin this wonderful Middle Eastern style recipe, you will first need to take out a sharp kitchen knife, and cube your watermelon rind and feta cheese.

Make sure you remove the green outer skin from the rind, as it is not edible.

Next wash and rinse your onion, and then cut the vegetables in half, which will give you fresh onion strips.

Next take out a salad bowl, and add in the cubed watermelon rind, cubed feta cheese, red onion strips, and spinach leaves.

Moving along, next take out a separate small mixing bowl and add in the extra virgin olive oil, balsamic vinegar, lime juice, ground black pepper, and kosher salt.

Mix this dressing mixture together using a spoon or metal whisk. Once your homemade olive oil dressing is finished, drizzle it over the top of your freshly made salad, and then gently toss the salad to give it an even coating of olive oil.

Serve the salad immediately, or let it chill in the refrigerator for one hour before serving.
