Watermelon Rind Fruit Bowl

  • 2 Cups Of Fresh Cubed Skinless Watermelon Rind
  • 2 Cups Of Large Seedless Green Grapes
  • 2 Cups Of Canned Drained Mandarin Oranges
  • 2 Cups Of Fresh Cut Strawberry Halves
  • 2 Cups Of Fresh Cubed Cantaloupe
  • 2 Cups Of Fresh Cubed Honeydew Melon
  • 2 Cups Of Freshly Chopped Pineapple Chunks
  • 2 Tablespoons Of McCormick Grated Lemon Zest
  • 1/2 Cup Of Cold Bottled Water
  • 1/4 Cup Of White Superfine Sugar

This excellent summer watermelon rind fruit bowl recipe was emailed to us by Renee of Seaside Oregon. To begin first you will need to take out a large sealable salad bowl.

Next take out a sharp kitchen knife, and prepare your watermelon rind, strawberry halves, cantaloupe, honeydew melon, and pineapple chunks.

Once the fruit has been trimmed and cut, place it into the salad bowl, along with the seedless green grapes, mandarin oranges, grated lemon zest, bottled water, and white superfine sugar.

Using a wooden mixing spoon, briskly stir up the fruit salad until you have an even distribution of ingredients throughout the salad bowl, and all of the sugar has dissolved.

At this point you will want to place a lid on the salad bowl, and then slide it into the refrigerator to chill for at least one hour.

Serve the watermelon rind fruit salad in small salad bowls. This recipe is perfect for any summer party, or it also works well as an after dinner dessert, just top it off with a little whipped cream.
