We recently received this watermelon rind with steamed white rice recipe from Josephine of Nampa Idaho.
To begin the recipe you will first want to rinse your uncooked white rice well under cool running tap water, then drain off any excess water.
Next boil enough white rice and water to yeild four full finished cups. Once your rice is done, serve each helping in a rice bowl.
Place a tablespoon of real butter over the hot rice, then add one cup of mashed watermelon rind preserves. Finally, top off the dish with a dash of cinnamon, nutmeg, and large sprinkle of powdered sugar.
