Watermelon rind contains an abundant amount of vitamins and nutrients, such as vitamin C, the amino acid citrulline, beta carotene, lycopene, vitamin A, protein, dietary fiber, thiamine, riboflavin, niacin, and many others. The watermelon rind contains less water than the flesh, as it's denser and therefor retains more nutrients. Recent scientific research conducted at Texas A&M university has concluded that the more yellow the watermelon rind is, the large amount of nutrients it will contain. If you check with your local grocer, they may sell specially grown yellow watermelon varieties. These yellow watermelons are grown and sold due to the fact that they are far more nutritious than the traditional pink flesh watermelons.
