Watermelon Rind Jam

Ingredients

  • 1 Pound Of Fresh Watermelon Rind
  • 3 Whole Fresh Cardamom Pods
  • 1 Tablespoon Of Fresh Squeezed Lemon Juice
  • 1 1/2 Cups Of White C&H Pure Cane Sugar
  • 1 Strip Of Fresh Lemon Peel
  • 3 Tablespoons Of Raw Wildflower Honey

Preparation instruction

To begin this recipe you will first need to cut your watermelon rind into a third of an inch strips.

Next add the watermelon rind strips to a pot, cover them with water, and then bring the water to a boil.

Once you have attained a rolling boil, back the heat off and let the rind simmer for half an hour, or until each piece is transparent and tender.

Moving along, next drain out the water, but do keep about one and a half cups of this liquid.

Next take out a heavy pot and add in the sugar and your leftover water. Stir the sugar around until it dissolves completely.

Next bring this new batch of contents to a boil, then add in the honey and lemon peel.

Next stir in the cooked watermelon rind, and let all of these ingredients simmer for fifteen minutes. Once you are done cooking, set the pot aside with a lid to cool overnight.

The next morning boil the contents again over medium heat, doing so until a thick syrup forms after about fifteen minutes.

At this point add in the lemon juice and cardamom to cook for five additional minutes, after which the jam is done. Once your watermelon rind jam has cooled, store it in sterilized canning jars.
