Candied Watermelon Rind

To begin you will first need to take out a sharp kitchen knife and trim off all of the outer green skin from the
watermelon. Cut the rind into small one inch cubes.

Next take out a large sealable mixing bowl, then add in the cubed watermelon rind, bottled water, and kosher salt.

Stir the ingredients together until the salt fully dissolves, then seal the bowl and slide it into the refrigerator
to chill overnight.

The following day you will need to drain the water from the rind bowl, fill it back up with fresh water, then empty
the mixing bowl into a large saucepan.

Bring the contents to a boil, and let it stand at that temperature for half an hour. Once you are done there, drain
the saucepan, then set the rind aside. Using the same saucepan, add in the apple cider vinegar and white superfine sugar.

Next take out a cheesecloth bag and add in the whole cloves, ground yellow mustard seed, and crushed cinnamon sticks.
Tie the bag off and add it into the vinegar and sugar mixture.

Bring this new batch of ingredients to a boil, then remove it from the heat and let it stand for fifteen minutes.

Next add in the boiled watermelon rind, and boil again in the vinegar until the rind is completely transparent,
and the vinegars starts to thicken with the sugar.

This process should take about fifty minutes. At this point you will want to remove the spices from the mixture,
then spoon the rind and syrup into one pint canning jars, leaving a half inch head space at the top.

Process your jars by letting them stand in boiling water for ten minutes. That concludes this recipe,
