Preparation instruction

To begin this recipe you will first need to take out a jar of sweet watermelon rind pickles.
The rind pickles can either be store bought or homemade, a recipe of which is available on our websites.
Next drain all of the juice from the jar, and then cut the pickles into small cubes or chunks. Moving along, next you will want to wrap each watermelon rind cube or chunk with the hickory smoked breakfast bacon, securing the bacon with a toothpick.
Set out all of your bacon wrapped watermelon rind cubes on a baking sheet. Once the baking sheet is full, preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.
Once your oven has sufficiently heated, slide the baking sheet into the oven and cook the rind and bacon until the bacon is crisp.
