Watermelon Rind Gazpacho

  • 1 Fresh Minced Jalapeno Pepper
  • 1 Fresh Diced Vidalia Onion
  • 2 Large Minced Garlic Cloves
  • 1 Pinch Of Kosher Salt
  • 1 Pinch Of Fresh Ground Black Pepper

Preparation instruction

This excellent watermelon rind gazpacho is a snap to whip up. To begin you will first need to take out your blender or food processor and plug it in.
Next add into the machine half a cup of watermelon rind, both cups of orange juice, and two tablespoons of extra virgin olive oil.
Blend these ingredients until they form a nice liquid puree. Once you are finished with that step, transfer the puree into a medium size sealable mixing bowl.
Next add into the mixing bowl the remaining watermelon rind, lemon juice, diced cucumber, diced parsley, chopped green bell pepper, minced jalapeno pepper, diced Vidalia onion, both minced garlic cloves, and finally a pinch of kosher salt and ground black pepper.
