Ingredients

  • 2 Pounds Of Fresh Cubed Watermelon Rind
  • 2 Pounds Of White Pure Cane Sugar
  • 2 Tablespoons Of Kosher Salt
  • 1 1/2 Quarts Of Bottled Water
  • 2 Cups Of Ungers Distilled White Vinegar
  • 1 Whole Fresh Sliced Lemon
  • 1 Teaspoon Of Regal Brand Whole Cloves
  • 1 Teaspoon Of McCormick Whole Allspice
  • 1 Ounce Of Crushed Cinnamon Stick

Preparation instruction

To begin this recipe you will first need to take out a sharp kitchen knife to prepare your watermelon rind. Cut the rind into small cubes, trimming off all of of the thin green outer watermelon skin.

Next you will need to make a brine with two tablespoons of kosher salt, and one quart of bottled water. Soak the cubed rind in this water overnight, or until it's tender.

Once done, drain out all of the water, and then thoroughly rinse the rind using a metal strainer. Moving along, take out a cheesecloth bag, and then add in the whole cloves, allspice, and crushed cinnamon stick.

Next place the cheesecloth into a boiling pot along with the watermelon rind.

Next add into the boiling pot the vinegar, sliced lemon, white sugar, and then roughly two cups of bottled water. Bring these contents to a boil, and then let them cook until the watermelon rind is completely transparent.
